Information about the Walleye:
The Walleye - sometimes called the Yellow Walleye to distinguish it from the now extinct Blue Walleye - gets its distinctive name because of the eyes - which reflect white light. Like nocturnal animals, this is caused by a light-gathering layer in the fish's eyes that allows it to see in very low light conditions. The Walleye is native to lakes and streams of much of Canada and the northern areas of the United States. The fish generally grows to be about 31 inches long (80 cm) and weighs roughly 20 pounds (9 kg.) It is considered one of the most edible of the sports fish, and when prepared the fish is light, flakey and delicious. It is the state fish of both Minnesota and South Dakota.
